“Vibianini in the kitchen” means cooking gourmet dishes in a few simple steps. Lorenzo welcomes chefs from all over Europe into his kitchen to cook their refined recipes together, which take on an exclusive flavour thanks to our Vibianini, concentrated in taste and quality.
This week`s recipe is a delicious dish prepared by chef Mark Dixon from The Kings Arms Fleggburgh (United Kingdom).
Pan roasted fillet of cod, Jerusalem artichoke, fennel, vanilla pickled grape, courgette, lovage & horseradish cream.
Living close to the beach and fish markets means great seafood. Cod is a favourite for its delicate, flaky flesh, lifted by British horseradish and perfectly balanced with fennel.
INGREDIENTS for 4 people
1. For the artichoke purée
Juice of 1/2 lemon, 500 g Jerusalem, artichokes, scrubbed well and roughly chopped, 140 ml double cream, extra virgin olive oil, salt to taste, pepper to taste
2. For the vanilla pickled grapes
454 g green grapes, 1 cup apple cider
vinegar, 1/4 cup water, 1 cup granulated
white sugar, 1/2 vanilla bean,
1/4 tsp. black peppercorns,
1/8 tsp. yellow mustard seeds
3. For the horseradish cream sauce
1 cup of double cream, 1 cup of dry
white wine, 1/2 shallot sliced, 1 bay leaf,
fresh horseradish to taste, salt to taste,
pepper to taste
4. For the lovage emulsion
200 g mix of lovage/parsley/tarragon
leaves only, 300 g vegetable oil,
1 clove garlic, 1 egg yolk,
1/2 tsp. Dijon mustard
5. For the cod
4 fillets of cod 180 g each, 2 tbsp. extra
virgin olive oil, fennel bulb thinly sliced,
1 lemon, 1 courgette cut into 4 wedges
6. To garnish
